What I prepped in the kitchen this week

Let's do another kitchen restock! Here is a glimpse of the things I made over the week to fill my fridge, freezer, and pantry. I love having easy snacks and food already preped and ready-to-eat to make the week go by a little smoother.

Herby Chickpea Salad: This is one that is perfect for meal prep. It last a week in the fridge and only gets more flavorful with time as it marinates in the fridge. I will add this to some leftover protein for lunch or my favorite reciently, it to add it on top of some avacado toast with an egg. This last week I didn't have all the ingredients as in the original recipe, so I added some extra veggies to make up the difference. Feel free to do the same!


Garlic Sourdough Croutons: It's rare we have a loaf of sourdough bread that goes past its prime, but hey, that's life. I don't know about you but my kids LOVE croutons and eat them like crackers. So if they don't all get eaten while they are warm I add them ontop of soups and stew or a graden fresh salad. They store wonderfully in an airtight container in your pantry.


Cinnamon Apple Muffins:  Ok you guys, I've cracked the code on these muffins. I created a bulk dry muffin mix that has made making muffins during the week a breeze. All I do is measure out the bulk ingredients and then add the milk, egg, vanilla extract, and added fruit or nuts. It's so versitile and can be changed into your family favorite muffins. I feel like I make 2 batches of these a week, so that's why I doubled the recipe this time. I had some apples that have seen better days and needed to get used, so I cubed them up, added extra cinnimon, and a sprinkle of slivered almonds ontop. Once they cooled I was able to bag up and stick them into the freezer. They defrost beautifuly. Just pull them from the freezer, allow to defrost on the counter or pop into the oven at 250 degrees for 5-10 minutes.
