Herby Chickpea Salad

With all the comfort food we eat through out the winter, I often get a hankering for something light and fresh. This is where this delicious chickpea salad enters the conversation. This herby, garlicy chickpea salad will be everything you're looking for. Light and fresh, but hearty and filling.
We are always trying to find more nourishing foods to add to our diets. Chickpeas, or some call garbanzo beans, are packed full of vitamins, minerals, fiber, and surprisingly tons of protien. Out of all of the plant-based proteins, this one's the best, Having eight out of nine essential amino acids.
This salad is full of fresh crisp veggies and flavorfull herbs. A simple citrus vinegarette with basic pantry staples. It's perfect for meal prep, as the flavors get better and better with time.

RECIPE
Ingredients:
2 cups cooked chickpeas
1/2 cup diced red bel pepper
1/2 cup diced red onion
1 cubed avocado
3 chopped green onions
1/2 cup shopped herbs (dill and parsley)
2 garlic cloves (grated)
1/2 cup olive oil
zest and juice of a lemon
1 Tablespoon grainy mustard
1 Tablespoon honey
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup chopped pistachios for garnish
Directions:
In a large bowl combine chickpeas, bell pepper, red onion, avocado, green onion and herbs.
In a smaller bowl mix up the dressing. Combine the garlic, oil, lemon zest and juice, mustard, honey, salt, and pepper. Pour over salad and toss to combine.
Add garnish of chopped nuts.
Keeps for several days in the fridge.
